HOW IT ALL STARTED
U’ Pacciaridd (the crazy man) was the most appropriate name for Leonardo Totaro.
The challenge he undertook of harvesting olives of different cultivars in mostly mountainous territory, later extended to the seashore, and with backward equipment, was only for brave adventurers.
He defied the obstacles and even opened a small trappeto mill for the olive harvested, using the ancient milling methods characteristic of the 1950s.

It is precisely in this territory that the dream of own production of Extra Virgin Olive Oil began.
Centuries-old olive trees covering about 50 hectares, located in the masserias of the Gargano land, between Manfredonia, San Giovanni and Macchia di Monte Sant’Angelo, constantly enhanced to preserve their naturalness and diversity of cultivars, ogliarola, coratina and leccina.

The history of Oleificio Totaro is written by the generations, who have carefully caressed every tree on the land where they were born.
From the olives, harvested with the hands of the brothers and their respective sons, Grandfather Leonardo began the business of milling olives in his trappeto, handing down the love and passion for the work of oil production, which holds the intrinsic added value of quality.

Today, Oleificio Totaro is one of the most technologically-productive innovative mills. Olives are cold-pressed with state-of-the-art machinery.
