Black chickpea soup

Murgia black chickpea soup is one of the tastiest soups in Pugliabecause, unlike white chickpeas, black chickpeas have a more intense, distinct and characteristic flavor and, when pureed, a particularly velvety texture.

 

In fact, this legume is a concentrate of well-being: it contains vitamins, a high iron content and is very rich in fiber. For example, the Murgia black chickpea contains three times as much as the classic one.

But now, let’s find out together how to prepare this fantastic recipe!

Procedure

Let's start preparing the black chickpea soup in advance. We soak the black chickpeas, in water at room temperature and for 24 hours remembering to change the water a couple of times.

After the soaking time has elapsed, we drain them, rinse them and put them in a large pot with vegetable broth or water that should overtake the chickpeas by a couple of inches, and a few bay leaves.

We bring to a boil and then lower the heat and leave to cook for 2 hours with the lid on: the chickpeas once ready will be firm outside and tender inside.

We prepare a sauté with Acquaviva red onion, a couple of tablespoons of Totaro Armonia oil, a clove of garlic and a few bay leaves.

When everything is well browned, we add the previously cooked chickpeas with their cooking water: if they have dried out too much, we can add some hot broth or water, just enough to cook them for another twenty minutes or so over moderate heat. We salt at the end of cooking.

When it is time to serve, we pour the black chickpea soup onto individual plates and garnish with the slices of homemade bread, toasted in the oven and broken up, a drizzle of oil and a grind of pepper pleasure and chili.
